For Emma and Felix’s beautiful wedding at Hornington Manor, that meant a completely bespoke gelato, dessert and coffee experience, created to the bride’s own brief.

Five Flavours, Created for One Wedding
Emma knew exactly the flavours she wanted.
Rather than asking her to select from a predetermined wedding menu, we arranged for five bespoke flavours to be handmade especially for the celebration:
- Ferrero Rocher
- Mango Sorbet
- Pistachio with Dubai Chocolate
- Cherries & Cream
- Lemon Cheesecake
And when we say bespoke, we really do mean it.
During the planning, Emma and I discussed the finer details of her handmade Ferrero Rocher gelato. She specifically wanted the gelato to include pieces of Ferrero Rocher throughout, rather than simply recreating the flavour — so we made sure that was part of the finished recipe.
It’s a small distinction, perhaps, but exactly the kind of detail that matters to us. If a bride has imagined something particular for her wedding dessert, we want the finished product to feel as close to that vision as possible.
We carried the idea through to the presentation too, adding whole Ferrero Rochers as a topping for guests to enjoy with their scoops. Unsurprisingly, they proved incredibly popular on the day.
The final menu felt considered rather than conventional.
Rich, textured Ferrero Rocher sat alongside refreshing Mango Sorbet; Cherries & Cream and Lemon Cheesecake brought a nostalgic dessert quality, while Pistachio with Dubai Chocolate added something distinctly contemporary.
Because for us, bespoke should mean more than adding two names and a wedding date.
It should begin with what the couple actually wants to eat — right down to the ingredients and finishing touches.

The Details Make the Dessert
The flavours were only the starting point.
We carefully considered the accompaniments, choosing toppings and desserts that would complement Emma’s menu rather than simply filling a display.
There were fresh cherries to complement Cherries & Cream, whole Ferrero Rochers alongside the handmade Rocher-filled gelato, our signature strawberry macarons, and authentic Dubai chocolate finished with gold dust, paired beautifully with the pistachio.
We also served our bite-sized vegan and low-gluten brownie cupcake bites, topped with raspberry cream and finished with a delicate sprinkle of freeze-dried raspberry.
And then there are the smallest details — the ones we believe make an event feel truly personal.
Our personalised wafers, created for the couple, transformed even a simple scoop of gelato into something unmistakably belonging to Emma and Felix’s wedding.
Because luxury, to us, isn’t about adding more.
It’s about paying attention.

The Modern Alternative to a Plated Wedding Dessert
When the main course was finished, guests weren’t presented with an identical dessert at their place setting.
They came to us.

For Emma and Felix, the experience didn’t end with dessert.
Alongside their bespoke gelato menu, we served freshly prepared barista coffees, hot chocolate and hot drinks, allowing guests to order exactly what they fancied as they relaxed after their wedding breakfast.
And there were some definite favourites.
Hot chocolate, cappuccino and freshly pulled double espresso proved especially popular with the guests — from something rich and comforting to accompany dessert, to that much-needed hit of proper espresso before the celebrations continued.
There is something wonderfully indulgent about finishing a wedding breakfast with gelato created especially for the occasion and then ordering a freshly made coffee exactly as you like it.
The result felt less like a conventional catered dessert course and more like discovering a beautifully styled little café and gelateria within the wedding itself.
It was relaxed without feeling casual.
Interactive without losing elegance.
And luxurious without being formal.
